Instructions
  1. Preheat oven to 350 degrees and grease a donut pan (THIS is the one I have) with butter or coconut oil.
  2. Sift together the dry ingredients.
  3. Whisk together the syrup, vanilla, butter or coconut oil, apple cider vinegar, grated apple and eggs, then add to the dry ingredients and stir to combine.
  4. Distribute the batter evenly into the molds, then bake for 12-14 minutes, until golden brown.
  5. While those are baking, make the drizzle by adding the juice and tapioca flour to a saucepan.
  6. Cook over medium heat until boiling, then reduce heat a bit and cook for a few more minutes until it is slightly thickened. If you want a thicker glaze, you can add a bit more tapioca starch.
  7. Remove from oven, allow to cool for a few minutes before gently removing from pan onto wire rack. I used a spatula to help release the donuts.
  8. Let sit for about 5 minutes, then drizzle with the apple juice glaze.
  9. Eat while warm for best results!
