It’s that time of year: apple season! My kids and I just went to a local orchard on a field trip and came home with apples coming out our ears.
Even though I have a few pie crust recipes on my site, I haven’t been able to master the flaky top crust. Usually, my crusts would fall apart and I just couldn’t make a great pie with a top crust. Until now.
This grain free apple pie has the most flakey, light crust I’ve tried!
Note: The secret to making the inside of this pie so amazing is to slice the apples thin. I used THIS to ensure I had nice, thin apples. And, it peeled and cored them for me, too!

- For the crust:
- 1.5 cups blanched almond flour
- 1/2 cup tapioca flour
- 2 TBSP coconut sugar
- 1 tsp salt
- 1/2 tsp gluten-free baking powder
- 2/3 cup organic palm shortening
- 3-6 TBSP cold water
- 1 tsp pure vanilla extract
- For the pie:
- 1/2 cup butter
- 2 TBSP tapioca flour
- 1/4 cup water
- 1/4 cup honey
- 1/2 cup coconut sugar
- 5 Golden Delicious apples

- For the crust:
- Using a fork, stir together the almond flour, tapioca flour, salt, baking powder and coconut sugar.
- Cut in the palm shortening until the mixture resembles course sand:
- Stir in the cold water, one TBSP at a time, and vanilla. Stop adding water when the mixture is holding together.
- Place in refrigerator while you prepare the apple filling.
- For the filling:
- Using a spiralizer peel, core and slice your apples. (If you don't have a spiralizer, just peel and core and then slice thin with a knife.)
- Preheat oven to 350 degrees.
- Melt the butter in a saucepan.
- Stir in tapioca flour to form a paste-type mixture.
- Add water, coconut sugar, and honey and bring to a boil
- Reduce temperature and let simmer for a few minutes.
- Check on your crust--if it's chilled completely, it's ready. If it's still a bit sticky and not cold, wait another 15-20 minutes. Note: The crust dough MUST be cold in order for it not to stick!
- Divide the dough in half and place 1/2 in a 9-inch pie plate, and put the other 1/2 back in the fridge.
- Place a piece of parchment paper on top and press down with another pie tin or plate until flat. Use your fingers to spread the dough crust to the sides if necessary.
- In a large bowl, combine the apples and butter mixture together, then pour into crust.
- Take the other 1/2 of your crust out of the fridge and place between 2 pieces of parchment paper.
- Use a rolling pin to roll into a circle, then lay on top of your pie.
- Cut a slit in the top, if desired.
- Bake in oven for 35-40 minutes, until top is golden brown and filling is bubbling and apples are cooked through.
- Let cool for 15 minutes before slicing.

I hear pumpkin seed flour is a good alternative, but I haven’t tried it myself…you could use another GF flour blend if you have one you like!

I just tried to make this and the crust turned out sticky and sludgey and in the trash can. The butter mixture turned into a gooey clump of sugar that didnt break up into the apples very well. I ended up remaking a separate recipe for the crust. I also used the exact same spirilizer and it doesn’t peel the apple and after two apples, i ended up just coring and cutting them myself as the spirilizer ended up cutting some of the seeds up because the core of the apple is often bigger than the hole. This was an interesting experience if i do say so myself… Lol

Hi, would there be a difference in the out come of this recipe if organic coconut oil (not melted) is used instead of the organic palm shortening?

Hi, Debra! The crust will not be as flakey, and will be more greasy. It will be more difficult to work with, as well. It’s possible, just won’t have quite the same result. I hope that helps!
