Instructions
  1. For the crust:
  2. Using a fork, stir together the almond flour, tapioca flour, salt, baking powder and coconut sugar.
  3. Cut in the palm shortening until the mixture resembles course sand:
  4. Stir in the cold water, one TBSP at a time, and vanilla. Stop adding water when the mixture is holding together.
  5. Place in refrigerator while you prepare the apple filling.
  6. For the filling:
  7. Using a spiralizer peel, core and slice your apples. (If you don’t have a spiralizer, just peel and core and then slice thin with a knife.)
  8. Preheat oven to 350 degrees.
  9. Melt the butter in a saucepan.
  10. Stir in tapioca flour to form a paste-type mixture.
  11. Add water, coconut sugar, and honey and bring to a boil
  12. Reduce temperature and let simmer for a few minutes.
  13. Check on your crust–if it’s chilled completely, it’s ready. If it’s still a bit sticky and not cold, wait another 15-20 minutes. Note: The crust dough MUST be cold in order for it not to stick!
  14. Divide the dough in half and place 1/2 in a 9-inch pie plate, and put the other 1/2 back in the fridge.
  15. Place a piece of parchment paper on top and press down with another pie tin or plate until flat. Use your fingers to spread the dough crust to the sides if necessary.
  16. In a large bowl, combine the apples and butter mixture together, then pour into crust.
  17. Take the other 1/2 of your crust out of the fridge and place between 2 pieces of parchment paper.
  18. Use a rolling pin to roll into a circle, then lay on top of your pie.
  19. Cut a slit in the top, if desired.
  20. Bake in oven for 35-40 minutes, until top is golden brown and filling is bubbling and apples are cooked through.
  21. Let cool for 15 minutes before slicing.
