Ok, I think I may have mentioned these cookies before in a previous post, but I just had to share again how great these are! This recipe was created by the wonderful Bill and Hayley over at The Primal Palate. The cookies are so good, they really don’t need fiddling with, but I did add a 1/2 cup almond butter to the mix, and that added a deliciously subtle almond buttery taste.
Ingredients:
- 3 cups Blanched Almond Flour
- 1/2 cup Coconut Oil, or butter
- 1/2 cup Pure Maple Syrup
- 2 Eggs
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 tsp Vanilla Extract
- 1 bag Enjoy Life Semi-Sweet Chocolate Chips (these are dairy/soy free)
- optional: 1/2 cup almond butter or peanut butter
- Preheat oven to 350 degrees.
- In a medium sized mixing bowl combine dry ingredients.
- In a small mixing bowl beat eggs, maple syrup, coconut oil or butter and vanilla extract with a hand mixer.
- Pour wet ingredients into dry and beat with hand mixer until combined.
- Stir in chocolate chips.
- On a parchment lined baking sheet, drop balls of cookie dough, about a tablespoon in size.
- Bake for 10-12 minutes.
Enjoy fresh and warm from the oven! I think they taste excellent after being in the fridge overnight, too!

Will be trying these tomorrow while I am confined to my house (post surgery)! I did one other recipe and used honey instead of maple syrup. BUT, I just recently found a recipe on Pinterest for browned butter and bacon chocolate chip cookies.. HEAVEN!?! Not Paleo, but Primal.. and might have to give that a go too 🙂

I just pulled my first batch of these out of the oven. They are amazing! I’ve tried a couple different almond flour cookie recipes, but this one was definitely my favorite. 🙂

Love these as is but today added 1/2c. Of sunflower butter to the batch. The inside of the cookie is bright green like spinach! Looks weird, but they taste even better than the basic recipe. Anyone else experience this with cooking with sunflower butter?

Hmmm…not sure about that! I’ve only used Sunbutter once, and didn’t have that problem. Weird?? Maybe someone else will have an answer…

Yes! Sunbutter does turn green when baked. We made Sunbutter (Peanut butter) Blossoms with Hershey kisses at Christmas and they were green, but still tasted great!

Sunbutter reacts with the baking soda turning the cookies a green color. Totally edible with no after effects. Some make them specifically this way for St. Patrick’s Day.

Any idea how well this dough freezes? I’m making them now but we don’t want to bake them all. Thinking of throwing some of the rolled up dough in the freezer.
