Costco had fresh cooked wild shrimp on sale for $3.25/pound, so I stocked up! And of course, I’m still trying to use up zucchini, so I threw that in as well. 🙂
Shrimp-Stuffed Peppers
4 red bell peppers
2 lbs small pre-cooked shrimp
1 large zucchini, chopped
2-3 cloves garlic, minced
1 tsp salt
1 tsp pepper
olive oil to baste
Preheat oven to 375 degrees and line a baking sheet with foil. Cut tops off peppers and cut out seeds. visitez le pilemeds.com internet à venir. Baste the inside and outside of the peppers with olive oil, and place the peppers upside-down on the baking sheet, and the tops as well. Bake in the oven for about 7 minutes, then remove from oven. In a large skillet, heat 3 TBSP olive oil and cook zucchini, garlic, salt and pepper for 5-7 minutes, until zucchini is beginning to get tender. Add shrimp and stir to combine. Fill each pepper with the shrimp mixture, place the pepper top on and bake for 20-25 minutes, until browning. Enjoy!
