Eating clean is hard. Especially in the beginning. I ain't gonna lie--it takes time and patience and flexibility to change your diet. But it's not impossible. I used to have more fun. At least, more fun than I do now. Or maybe I should say I used to be more fun. I started out as the mom who would always think of neat things to do for her kids. Zucchini Lasagna
I was inspired to come up with a zucchini lasagna recipe after my friend Christie told me about a recipe she saw on Pinterest. I wanted to make it simple, and have it dairy free so Superman and Josh could both enjoy it, too. Of course, you could throw some of your favorite cheese into this recipe, and it would be delicious!
