It's French for "under vacuum" and is a method of cooking food sealed in airtight plastic bags in a water bath for longer than normal cooking times at lower than normal temperatures. I get the question a lot "HOW do you do it all?!" So I thought I'd break down a typical day for you so you can see it's not magic, it's purely by God's grace!
