Do you not like asparagus? If you’re anything like my son, you don’t. Or maybe you’re on the fence, and haven’t decided. Or maybe you love it! No matter what your opinion, this recipe rocks the house. Even my skeptic son who thinks “asparagus” is a bad word liked it. And that is saying a lot.
Asparagus is high in vitamin K and folate, and is high in anti-inflammatory nutrients, too! It also contains the amino acid asparagine, as well as chromium, a trace mineral that helps insulin do its job transporting glucose.
Not only is asparagus good for you, but this Parmesan-Crusted Garlic Asparagus is a quick side dish that is sure to please even the harshest asparagus critic. =)

- 2 lbs asparagus
- 4 cloves garlic crushed
- 1/2 cup fresh parmegiano reggiano or fresh grated parmesan cheese
- 2 tsp salt
- 1/2 Lemon juiced (optional)
- 1/4 cup avocado or olive oil
Ingredients

- Preheat oven to 350 degrees and line a baking sheet with foil.
- Trim asparagus so the ends are cut off, and toss all ingredients in a large bowl to coat evenly.
- Spread onto baking sheet evenly and bake for about 8 minutes, then turn oven to broil and broil for 2-3 minutes, until cheese is browning.
- Remove and serve promptly.
