I used to love McDonald’s chicken nuggets when I was a kid. Whether it was their marketing or the flavor that made me love them, I’m not sure. All I know is that their breading was unique and yummy. The inside? Not really sure what it was…but being the mean mom that I am, I pretty much never take my kids to McDonald’s. So I felt it made sense to come up with a great nugget recipe that was fried, had crispy breading and tasted amazing. And so, I came up with this Paleo Chicken Nugget recipe. My kids were eating them faster than I could dole them out!

- 1/2 cup blanched almond flour
- 3/4 cup tapioca flour arrowroot would work as well
- 1 cup full-fat unsweetened coconut milk
- 2 egg whites
- 1/2 cup water
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp chili powder
- 2-3 cups organic palm shortening depending on how large your pot is
- 2-3 lbs chicken tenderloins or breasts cut into "nugget sized" chunks
Ingredients

- Heat the 2 cups palm shortening over medium heat in a saucepan.
- Stir together the dry ingredients, then add in the remaining ingredients.
- Add all the chicken into batter and stir to coat.
- *Test the oil by dropping a small drop of batter in. If it floats to the top and sizzles, you're good! If it sinks, wait a bit longer.
- Using tongs, place a few at a time carefully into hot oil, making sure they don't touch each other.
- After 2-3 minutes, flip over and cook another 2-3 minutes.
- Remove and place on plate covered with a paper towel.
- Repeat until chicken is all done cooking.
- You won't be disappointed in these!

I tried these and they tasted good but the breading fell off of most of them and stuck to the bottom. I used ghee though as my oil. Tips?

Hi, Sarah! Hmm. I haven’t tried ghee for this before, so I’m not sure? I have found that if I let the shortening get too high of heat, that can cause issues with the breading sticking to the nuggets. Also, if your chicken is wet before you apply the batter, that could also cause a problem. Hope that helps!

Is there another flour that you would recommend other than Almond flour? I’m nut sensitive. Also regarding the Palm oil, would you be able to save the oil and use it again several times for other deep fried items?

Hi, Kim! I don’t have another recommended flour unless you can do just a GF flour blend? Also, I have re-used the oil! Hope that helps!
