Darn food dye. I hate that stuff! With a host of side effects including ADHD and other behavioral issues, I just can’t stand giving my kids food and candy with food dyes. Of course, sometimes it’s unavoidable.
I wanted to come up with a cookie recipes that we could use for Valentine’s Day without using food dyes. These cookies are SO yummy and are only tinted naturally with beet juice!

Ingredients
- 2 cups blanched almond flour
- 1/2 cup tapioca flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1/2 cup pure maple syrup or honey
- 2 tsp pure almond extract
- 4 tsp beet juice

Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Mix together dry ingredients in a large bowl.
- In a separate bowl, whisk together egg, syrup or honey, almond extract and beet juice.
- Stir into dry ingredients.
- Scoop onto baking sheet and baking for 8-9 minutes, then cool on wire rack.
