These are the world’s best gluten free lemon bars!
Do you love lemon bars? I used to love them, and then a few years ago, I made a batch of Paleo lemon bars. That night, I was hit with an awful stomach bug, and, well…the rest is probably self-explanatory. After that, any time I even heard the word “lemon bar,” my stomach turned.
My previous lemon bar recipe is kind of hit or miss. Some people have great success, while others have major fails. After a couple years, I can safely say I am able to tolerate lemon bars again. So I decided to come up with an all-new recipe, using my favorite gluten free flour blend as a base.
We have an abundance of lemons on our lemon tree right now, and I’m always searching for ways to use them up! It was the perfect time to come up with a new gluten free lemon bar recipe, and after a few trials and errors, I finally settled on this recipe! I love the zingi-ness of lots of lemon, so I add in extra zest!
You could even make these with mandarins or oranges, and they would be amazing.
Gluten free lemon bars

- 1 cup butter softened
- 1/2 cup organic sugar
- 2 cups Bob's Red Mill 1:1 GF flour blend
- 4 eggs
- 1 1/4 cups organic sugar
- 1/4 cup Bob's Red Mill 1:1 GF flour blend
- 2 lemons, juiced + zest of both lemons *For even more lemon flavor, use the zest of another 1-2 lemons!
Ingredients

- Preheat oven to 350 degrees.
- Combine the 1 cup butter, 1/2 cup organic sugar and 2 cups GF flour, then press into a 9x13 pan until even and compact.
- Bake for 15-20 minutes, until golden brown.
- While that is baking, whisk together the remaining ingredients.
- Remove crust from oven and slowly, carefully pour the lemon mixture on top.
- Bake for an additional 20 minutes, then remove and allow to cool (bars will set as they cool).
- For maximum yumminess, store in fridge and serve chilled. YUM!!

Hi there, is there a ubstitute for the gluten free flour? I am using mostly coconut an almond flours. thanks

Hi, Nancy! You can try subbing out almond flour in the crust, I haven’t verified that it works well as a direct sub in this recipe, though. I do have a Paleo lemon bar recipe that you can try here: Paleo Lemon Bars
