Zoodles (noodles made from zucchini) are fun! They’re a great-tasting, low carb sub for regular pasta. These Garlicky Zoodles with Slivered Almonds are simple to make, and are a fun way to use up that zucchini! I use this spiral vegetable slicer to make these and every time I pull it out, I feel giddy!

- 3 large zucchini peeled and ends removed
- 3-4 cloves garlic olive oil if you don't have this you can cook a few garlic over low-medium heat with regular olive oil for about 7-8 minutes beforehand, and then use that!
- 1 pinch red pepper flakes
- salt & pepper to taste
- 1/4 cup slivered almonds if you don't have slivered on hand just slice up some almonds

- Take the prepared zucchini (ends cut and peeled) and using your spiral vegetable slicer, spiralize your 3 zucchini.
- Heat oil in a large skillet or wok and add the zucchini, red pepper, salt & pepper and 1/2 the almonds.
- Cook for about 10 minutes, stirring frequently, until tender.
- Remove to serving tray and sprinkle with remaining almonds.
- Enjoy!
