I’ve never used Macadamia nut butter before, but I’ve wanted to try it for awhile. I made a batch in the food processor by just putting 2 cups of macadamia nuts in and processing for about a minute until it was smooth and creamy:

Recipe: Macadamia Nut Butter Cookies (Makes 24-30 cookies)
1 egg
1 tsp vanilla
1/4 cup pure maple syrup
2/3 cup macadamia nut butter
2 cups almond flour
1 tsp baking soda
1/4 tsp salt
1/2 cup dairy-free, soy-free chocolate chips (optional)
Preheat oven to 350 degrees and line a baking sheet with parchment paper. Beat together the egg, vanilla, syrup and nut butter. Add almond flour, salt and baking soda and beat until combined. If desired, stir in chocolate chips (I did one batch without, and one batch with). Scoop onto baking sheet and bake in oven for about 10 minutes, until lightly golden.

We actually have a batch in the oven. The first pan came out a little bit ago and the kids and I tried one. Please know that we’re new to Paleo and they’ve been such great sports about it all. I wanted to have something I could put in their lunches. I grabbed the ingredients and made our very first Paleo treats…and they’re AMAZING! This was our first time making nut butter of any kind.
