Recipe: Italian Drop Biscuits
2 1/2 cups almond flour
1/2 tsp salt
1 TBSP Italian seasoning
2 eggs, beaten
1/4 cup organic palm shortening (you can pick this up at Whole Foods or other health food sections at grocery stores) or pastured butter
Preheat oven to 340 degrees. In a medium bowl, combine almond flour, salt and Italian seasoning. Add shortening and mash with fork until you get a crumbly texture. Add in beaten eggs and stir until combined and mixture is like dough. Drop by heaping tablespoons onto a parchment paper-covered baking sheet. Bake in oven for 10-12 minutes, until golden brown. Serve promptly. I’m going to try these for dumplings in some “turkey and dumpling” soup soon!
