I was given the opportunity by Lundberg Family Farms and Brandfluential to use one of Lundberg’s boxed rice products to come up with a new recipe. Of course, this is not a Paleo recipe, but our family eats rice a couple times a week, and we all do great with it. My dad was from India, so I grew up on Indian food, and rice was a staple at dinner!

For my amazingly simple Indian recipe, I used Lundberg’s Garlic & Basil Rice and Wild Rice. Ingredients? Check ’em out here:
Organic Parboiled Brown Rice
Organic Wild Rice
Organic Dried Garlic
Sea Salt
Organic Brown Rice Flour
Organic Dried Onion
Organic Dried Cane Syrup
Organic Spices (Black Pepper, Parsley, Basil)
Organic Rice Concentrate
Organic Extra Virgin Olive Oil
Not bad, right? I don’t use boxed products often at all, but I was so pleasantly surprised to know that there is a product like this out there that is pretty darn “clean.” Real food is so important to me, and I try to feed my family the most real, closest to fresh, ingredients as possible. And this rice makes it easier for those on a tight schedule who are busy (aren’t we all?!) to feel less overwhelmed with eating healthier.
So, now for this amazingly simple recipe:
Indian Chicken and Rice (serves 4)
1 box Lundberg Organic Garlic & Basil Rice and Wild Rice
2 lbs chicken tenderloins
2 tsp paprika
2 tsp cumin
1 tsp turmeric
1 tsp curry powder
1 tsp salt
3 TBSP avocado or olive oil
Prepare rice according to directions. While that is cooking, heat oil in a large skillet and stir together spices in a small bowl. Sprinkle one side of the chicken tenderloins, and then place them, spice side down, into the heated skillet. Sprinkle top side with the spices, and cook for 2-3 minutes, then flip tenderloins over. Cook for another 3-4 minutes, until no longer pink, then remove to plate and keep warm until rice is done.
To serve, slice chicken and place over rice. Enjoy while warm!

Mmmm… that sounds so yummy! Love Indian flavors, but usually cooking up a batch of curry takes more time than I have. Pair this with a salad, and I’d be good to go!

Pastured eggs. The closest farm that sells any in my area is about 90 miles away, so we’re thinking about raising our own chickens for pastured eggs.

My real food tip is to prep my veggies when I bring them home that way they are ready to go and won’t go to waste. Also I keep a list on the fridge of what proteins/veg/fruit we have inside so everyone knows what is available for snacks/lunches/etc
