This recipe isn’t grain-free since it uses oats, but if you do OK with oatmeal, this is a definite keeper!
Recipe: Gluten-Free Oatmeal Apple Crisp
4 apples, peeled, cored and diced
1/2 cup coconut sugar
2 TBSP tapioca flour or arrowroot starch
1 TBSP cinnamon + 1 tsp cinnamon, separated
1/2 cup water
1 cup gluten-free oats (I didn’t have quick-cooking, so used regular, but you can use either here)
1 cup almond flour
1 tsp gluten-free baking powder
1 tsp baking soda
1/2 cup coconut oil or butter, melted
In a small bowl, combine the diced apples, coconut sugar, tapioca or arrowroot, 1 TBSP cinnamon and water. Pour into an 8×8 pan. In a separate bowl, stir together the oats, almond flour, baking powder, baking soda and coconut oil or butter. Crumble on top of the apple mixture and bake for about 25-30 minutes, until apples are tender and crumb topping is golden brown. Let cool for a few minutes before serving.
