My hubby, who I lovingly refer to as Superman, has celiac disease. You can read more about his story HERE. After years of having to eat a strict Paleo diet to heal his gut, with no grains at all, he was finally able to introduce a few gluten-free treats every now and then.
Breakfast is pretty much always the same thing for Superman: an egg, over-medium, pan-fried sweet potatoes and an avocado. I think it gets old for him sometimes. =)
Every once in awhile, I mix things up for him. This week, I decided to use some Udi’s everything bagels! I had planned on using bacon in this recipe, but honestly, was short on time and had some uncured ham in my fridge. You could easily swap out the ham for any other meat you like!
What you need:
1 Udi’s Everything Inside bagel (or another of your favorite Udi’s bagels!)
2 eggs
1-2 slices uncured ham
a few slices of raw cheese (Raw cheese is easier for many lactose-intolerant people to tolerate because it still has the enzyme needed for digestion. You can read more about the benefits of raw cheese HERE.)
salt & pepper to taste
1-2 TBSP avocado oil, olive oil or butter
What to do:
Heat oil or butter in a skillet over medium heat.
Toast the two bagel halves and apply some butter, if desired.
Crack eggs into pan and break yolks.
Place ham and cheese on top of one yolk, and then place other egg, yolk-side down, on top of it.
Let cook for a few minutes, then place onto bagel and top with other bagel half.
Enjoy promptly!
