We got our box of veggies from our CSA yesterday, and I decided to throw them into this rice recipe. This isn’t Paleo obviously, but it is delicious, and our family seems to all do fine with rice. This is an awesome switch-up to plain rice! You could, of course, add in more veggies, or change up which ones you put in. Lots of possibilities!
Recipe: Garden Veggie Rice
3.5 to 4 cups uncooked rice
3 tomatoes, chopped
1/2 cup fresh basil, chopped
1 clove garlic, minced
3-4 TBSP avocado oil or coconut oil
salt/pepper to taste
5-6 cups water
Heat oil in a large, deep skillet over medium heat. Add tomatoes and basil and cook for about 5-6 minutes, until tomatoes are tender. Stir in garlic and cook until fragrant, about 2 minutes. Stir in rice and salt, and cook for 3-4 minutes, then add in water. Bring to a boil, reduce heat to low, cover and let simmer for 10-15 minutes, until rice is done and water has been absorbed. Enjoy!
