When I was growing up, I loved Orange Julius. I would usually only get it once a year, while school-clothes shopping in Sacramento (we lived in a small town about an hour away). I haven’t recreated that taste since “going Paleo.” I wanted a cross between that and an orange creamsicle, with a twist of banana. After my successful Homemade Citrus Cleaner, I was inspired to use some more mandarins. This is what I came up with:
Recipe: Fresh Fruit Creamsicle Cups
3 ripe bananas
3 mandarins (or 1 large orange)
1 TBSP vanilla
1/2 cup unsweetened, full-fat coconut milk
8-9 ice cubes
Peel bananas and break in half. Place on a large plate in a single layer. Peel mandarins, break into segments and place onto plate with bananas:
Place in freezer and freeze for 1 hour.
Remove from freezer and place fruit, vanilla, and coconut milk into a blender or food processor. Blend just until combined. Add ice and blend. Pour into serving dish, garnish with a bit of orange zest, and serve promptly. Or, if you have extra time, place in freezer for 30 minutes to an hour and let harden for an even cooler treat!
