My kids didn’t even realize there was eggplant in this dish! Bwahahahahaha!!!! Creating this Eggplant con chicken and bacon recipe was so much fun and it tasted really good!
Recipe: Eggplant Con Chicken and Bacon
2 skinny eggplants
1/2 pounds bacon, cut into small pieces2 pounds chicken (thighs or breasts–I used thighs),cubed
2 cloves garlic, minced
1 red bell pepper, sliced into small, thin pieces
salt to taste
paprika to taste
Peel the eggplant, and cut into small cubes. Heat 3-4 TBSP avocado or coconut oil in a large skillet over medium heat. Add the eggplant, pepper and garlic, cook and stir occasionally until eggplant is tender. Add chicken, salt and paprika and continue to cook. Meanwhile, in a separate skillet, cook the bacon until crisp and put on paper towel to drain. Once the chicken is done, add bacon. Serve promptly.

Looks great. Question though – do you serve sides with this? I’m trying to gradually convert my family to paleo eating when at home so have been serving mostly paleo dinners. They are usually hungry soon after, and I end up back in the kitchen cooking up until bedtime. Hi, Brandae! Yes, I served sides–my kids are always hungry, too. I often (not at the moment because I’m slacking! lol) have a snack drawer in the fridge and in the pantry with premade stuff…bags with veggies, fruit, boiled eggs, lunch meat, nuts, I even do chips and some gluten free crackers sometimes. I tell the kids to eat until they’re full at dinner, and not to ask me for a snack until at least an hour has gone by. I feel your pain–it’s tempting sometimes to just give them a freakin’ bagel to fill them up! lol But ultimately, I know how much better they feel and much better it is for their little bodies to eat the good stuff. Hope that helps!

This is great b/c my family hates eggplant and we have been getting in our CSA lately. Tonight I shredded and then diced the shreds (made it REAL small lol) and added to meatloaf. No one said a thing!
