Rachael has used the Paleo Autoimmune Protocol diet to help treat her own Hashimoto’s Disease, and her recipes are not only healing, but amazingly delicious!

Today I’m going to share one of the recipes that jumped off the page at me: Eggless Mayo!
Eggs can be a huge trigger for people who have an underlying autoimmune condition, and most homemade mayo recipes have eggs as their base. But not this one! Wait till you try this perfect condiment!
Eggless “Mayo”*
What You Need:
3/4 cup sustainably sourced palm shortening
1/2 cup avocado oil
2 TBSP lemon juice
Pinch of salt
What To Do:
You have to use an immersion blender for this recipe, as that is what gives the “mayo” its smooth whipped texture. Add all the ingredients to a mason jar or the measuring and blending jar that came with your immersion blender. Blend everything together until smooth…and that’s it! Chill the “mayo” for about an hour before using.
