Here are December’s crockpot freezer meals, and they’re all Paleo!
As I’ve mentioned before, I love getting together with a friend to prep Paleo freezer meals. Usually, they’re Whole30 friendly as well! Here are December’s crockpot freezer meals (they’re Paleo, too)!
Beef Carnitas
INGREDIENTS
3–4 lb chuck roast
1 (4 ounce) can green chile peppers, chopped
1 TBSP lime juice
2 TBSP chili powder
1⁄2 tsp dried oregano
1⁄2 tsp ground cumin
2 cloves garlic, minced salt and pepper to taste
FREEZING INSTRUCTIONS
Combine all ingredients in a large Ziploc bag and toss to coat, then place in freezer.
COOKING INSTRUCTIONS
To serve, thaw then cook in slow cooker for 6–7 hours on low.
Chicken with Artichoke Cream Sauce
INGREDIENTS
4 boneless, skinless chicken breasts
3 TBSP butter or coconut oil
3 cloves garlic, minced
1⁄4 tsp red pepper akes, or more if desired
1 cup vegetable broth or chicken broth
1⁄2 cup coconut cream or full fat coconut milk
1 cup artichoke hearts, chopped
1 tsp Italian seasoning
salt and pepper to taste
FREEZING INSTRUCTIONS
Combine everything in a large Ziploc bag and freeze.
COOKING INSTRUCTIONS
Thaw in refrigerator overnight, then place in slow cooker and cook 4–6 hours on low.
Pineapple Salsa Verde Chicken
Get the recipe ingredients HERE.
To make this freezer meal-friendly, just add all the ingredients to a large Ziploc bag and freeze. Thaw overnight and follow the original recipe when cooking. If adding to the crockpot frozen, add an hour of cook time.
Honey Mustard Pork Chops
INGREDIENTS
4 pork chops
1⁄2 cup Dijon mustard
1⁄4 cup honey
1 TBSP minced garlic
1⁄2 tsp paprika
1/3 cup vegetable broth salt/pepper to taste
FREEZING INSTRUCTIONS
Combine all ingredients in a large Ziploc bag and toss to coat, then place in freezer.
COOKING INSTRUCTIONS
When ready to cook, thaw overnight in fridge and cook on low in slow cooker for 4-6 hours.
Slow Cooker Rosemary Leg of Lamb
INGREDIENTS
3 lb leg of lamb, shank removed (no bone)
1⁄4 cup olive or avocado oil plus 1⁄4 cup olive or avocado oil, separated
6 cloves garlic, crushed 1 tsp dried oregano
3 sprigs fresh rosemary, stems removed
1⁄4 cup chopped fresh mint salt/pepper to taste
FREEZING INSTRUCTIONS
Mix all the ingredients except for lamb and 1⁄4 cup oil in a bowl, then rub over entire lamb. Place into large Ziploc bag and freeze.
COOKING INSTRUCTIONS
When ready to cook, thaw for at least 12 hours in refrigerator. Heat additional 1⁄4 cup oil in a large skillet on medium-high heat, and quickly brown all sides of lamb. Place directly into slow cooker and cook on low for 6–8 hours.

I love meal prep recipes but I’ve never actually made a meal to freeze but I love that idea, especially for busy weeks/months. The only problem is, the freezer in my apartment isn’t very big! But hey, I think I’d be able to fit a few meals in there 🙂 Thanks for sharing these easy and tasty meals that practically cook themselves!
