Recipe: Chicken & Broccoli Stir Fry
1 lb chicken (boneless, skinless) — I used thighs
3 TBSP sesame oil
pinch red chili pepper flakes
salt and pepper to taste
3 TBSP coconut oil
1 lb broccoli, chopped
1/2 head cabbage, sliced into “noodles”
1/4 cup green onions, chopped
2 TBSP coconut aminos
Heat the sesame oil in a large skillet over medium-high heat. Add chicken, salt and pepper and red chili pepper flakes, and cook until chicken is almost done. Remove and set aside. Add remaining ingredients to the skillet and cover. Cook 6-7 minutes, stirring occasionally, then add chicken back in and continue to cook until done. Serve warm.

Had this for dinner tonight and was really hoping I would have left overs for tomorrow. Not a chance. This had so much flavor. It was so very good. I will be making this again very soon!!

Thanks for the recipe – made this for my hungry family of dad and four growing boys (plus me! baby is too little to chow yet). Anyway, I used more chicken and broccoli than called for but still didn’t have enough to go around since it was so yummy. It is incredibly rare that I find an allergy-free recipe that EVERYONE eats without grumbling so I truly am thankful for this one. 🙂 I used chicken breast, broccoli, coconut oil, sesame seeds, minced onion, Herbamare, black pepper, and the coconut aminos. Will surely make again! Have a great weekend. Oh, I hope you’re feeling better re: jaw dislocation! How scary! Brandae
