Recipe: Caramelized Onion and Bell Pepper Frittata
7 eggs
1 small bell pepper, chopped small
1 small red onion, chopped small
1.5 cups chopped broccoli
1 tsp salt
1 tsp red chili pepper flakes (optional)
1/4 cup raw cheese (optional)
2-3 TBSP olive oil
Preheat oven to 325 degrees and heat oil over medium heat in a cast iron skillet or oven-proof skillet. Add onion and bell pepper and cook for 6-8 minutes, until tender and beginning to brown. Add broccoli, salt and chili pepper flakes and cook for another 3-4 minutes, or until onions and bell pepper are caramelized. Gently pour eggs over the broccoli/onion/pepper mixture, but do not stir! Turn burner off and let cook for 2-3 minutes. Sprinkle cheese on top (if desired) and cook in oven for 8-10 minutes, or until set. Broil for the last few minutes to brown the top, if desired.
