This recipe was inspired by Melissa over at The Clothes Make the Girl. Her cookbook, Well Fed, has a recipe called “Fried apples with bacon and pecans” in it. If you wanna see that recipe, you’ll just have to go get her cookbook! This one is close to it, but I didn’t have bacon…or lemon. So I did what I needed to do.
Recipe: Caramelized Apples and Cinnamon (serves 2-3)
2 apples, peeled and cored, and sliced pretty thin
1 TBSP coconut oil
A little less than 1/4 cup chopped unsalted pecans
1 tsp. cinnamon
pinch of salt
Heat oil in a large skillet over medium heat. Add apples and sprinkle with cinnamon and salt. Stir and let cook for 2-3 minutes to brown. Stir again, add pecans, and let cook for another 3-4 minutes. Stir again, and cook until desired doneness. I like mine pretty soft.
*Note: This recipe is Whole30 approved. However, make sure you’re not using it as a crutch to satisfy those sweet cravings! I try to have this as part of a meal or at a time when I’m not necessarily craving something sweet. Enjoy!

OH MY GOODNESS!!! I could go on and on and on and on…forever about how YUMMY these are!!! Thank you thank you thank you!!! I know I shouldn’t be so excited about food (therein lies the problem…) but WOW!!! YUUUUUMMMM!!! I almost feel guilty!

These were fantastic!! I used walnuts because I didn’t have pecans. I think slivered almonds would be tasty too!!!
