...and I don't miss it at all! My 48-hour challenge has quickly turned into 6 weeks. With the exception of a few "emergencies" where I needed to melt my coconut oil or butter really fast, and heating up my "rice sock," I haven't used the microwave at all. No more nuking veggies or heating up leftovers. It's become normal to me to just pull out a saucepan to reheat food. And cooking Superman's sweet potato in the microwave every morning? No more! I pre-bake 4-5 sweet potatoes, cut them up and put ... continue reading...
Chipotle Pork Tenderloin
This recipe definitely has a kick. If you like a little spice, this is great. You can lessen the amount of chipotle chili powder if you want to tone it down a bit, and add a bit more oil. Recipe: Chipotle Pork Tenderloin 1 average-size pork tenderloin (mine was 2 small tenderloins--about 1.5 pounds total) 2 tsp garlic salt 1 tsp onion powder 2 TBSP chipotle chili powder (or less, depending on how spicy you like it) 2 TBSP olive oil 1/4 cup honey Add all ingredients to ... continue reading...
Dairy-Free Chocolate Covered Macadamia Nuts
These aren't sugar free. But, they are dairy-free and soy-free and they came at the request of a friend, so how could I refuse?? Eat them with caution! Recipe: Dairy-Free Chocolate Covered Macadamia Nuts (makes enough for a couple people to snack on) 1/3 cup dairy-free, soy-free chocolate chips 1/2 tsp coconut oil 3/4 cup roasted macadamia nuts (mine were salted) Melt the chocolate chips, and stir in coconut oil. Stir in macadamia nuts and pour onto a plate covered with ... continue reading...
McDonald’s in Hospitals?! Please say it ain’t so.
McDonald's...hospitals...an oxymoron, right? Thousands of diabetics heading to the hospital for care, and in some of those facilities, McDonald's is being served down the hall? Wow. It drives me crazy to see places like McDonald's touting "healthy" alternatives like fruit parfait or fruit and maple oatmeal. Did you know that this McDonald’s product contains more sugar than a Snickers bar and only 10 fewer calories than a McDonald’s cheeseburger or Egg McMuffin?? Healthy? Please. So ... continue reading...
Salted Cinnamon Walnuts
These are a perfect crunchy snack that carry a hint of cinnamon and sweetness. I would call it a savory snack, though. I bet it would taste great with pecans, too! Recipe: Salted Cinnamon Walnuts 3 cups walnuts 2 TBSP coconut oil, melted 1 TBSP honey or pure maple syrup 3/4 tsp salt 1.5 tsp cinnamon Preheat oven to 350 degrees and line a baking sheet with parchment paper. Combine all ingredients in a bowl and stir until walnuts are well-coated. Pour into a single layer ... continue reading...
