We eat rice a couple times a week in our house. We all do fine with it, and I like the kids to have some variety. Now that Superman is doing so much better, it’s nice to have rice sometimes! Again, not Paleo, but something everyone in our family has no issues with, and we enjoy it occasionally.
Recipe: Bell Pepper Rice Pilaf
3 cups Basmati rice
1/4 cup dried bell peppers (I got mine HERE) or 1/2 cup fresh bell peppers, minced
1/4 cup olive oil
~2 tsp salt
4 cups hot water
Add rice, bell peppers, olive oil and salt to a large saucepan. Cook over medium heat for about 6-7 minutes, until rice is beginning to turn white (instead of opaque). Add hot water and bring to a boil. Reduce heat to low, cover and cook another 10-15 minutes, until water has been absorbed. Turn off burner and let sit for 5-10 minutes. Note: don’t remove lid!
