Zucchini, zucchini, zucchini. It’s coming out my ears! But, I won’t complain, as I love having this problem! It forces me to get creative with how to use it up, and I get to give away free food to my friends!
I recently put together a round up of more than 30 zucchini recipes , and then I thought, “what about zucchini chips?”
I use a Nesco dehydrator that I love. It has six trays, and fits lots of fruits or veggies on it!
Making these salty zucchini chips is simple and a perfectly healthy snack!

- 1 large zucchini or 2 medium zucchinis
- salt/pepper
- any other desired spices (I didn't use anything but salt this time and they were delicious!)
Ingredients

- Cut the ends off and slice the zucchini thin. I repeat, slice thin!
- Place in single layers on dehydrator sheets, sprinkle LIGHTLY with salt, and dry at 135 degrees F for about 6-8 hours, until completely crunchy.
- Note: You don't need much salt at all, as these will shrink down, and the salt will seem extra salty!
