Pesto is an amazing thing to have at your fingertips. It is so easy to make and is full of refreshing ingredients.
A great pesto can infuse flavor into what might be a boring dish. Pestos are amazing for creating layers of flavor and a pesto can really be anything. It’s simply fusing flavors together, pesto combinations are unlimited.
Most pestos typically have pine nuts in them, but as I combed through my pantry, I didn’t have any and I could have substituted some other nuts in it, but I just didn’t think that walnuts or almonds would work in this one.

- 3 handfuls Spinach
- 1/2 cup extra virgin olive oil
- 1 clove garlic
- Juice from ½ a lime
- Lime zest
- 1 green onion
- 1 handful raisins
Ingredients

- Place all ingredients in a food processor and blend until well mixed.
- Use on top of roasts (try my BBQ Beef Roast with Spinach Pesto), add to meatballs, salads and more.
