Recipe: Hearty Paleo Soup
2-3 ham hocks
1 lb beef stew meat
4 large carrots, sliced into rings
1 large onion, diced
1/4 cup fresh parsley, chopped
1 small eggplant (the skinny kind), peeled and cubed
2 cloves garlic, minced
1 TBSP chili powder
pinch cumin
salt to taste
6 cups water
3 TBSP olive oil
Heat olive oil over medium heat in a large pot. Add onions, carrots, garlic, parsley and eggplant and garlic and cook until onions are translucent. Add in remaining ingredients, bring to a boil, then reduce heat and simmer, covered for a couple hours, stirring occasionally. Serve nice and warm!

Seriously did you look in my fridge/freezer and see what I needed to use up. I just looked last night and made a mental note I needed to use up the ham hocks we have left from our pig, an abundance of onions and parsley from our CSA and carrots getting soft in my crisper. This is on my menu plan for Sunday! Yum.

Very thankful to find y’all 🙂 We are new to this clean eating 🙂 We are always late the party 🙂 you recipes are the first I don’t find overwhelming.Ive never used almond flour or arrow root…honestly I never heard of them until I started this journey.My family teases me about my clean eating come from southern cooks 🙂 I love that your not hardcore my husband is not willing to give up rice…yet! I have lost 18lbs I am super excited about that…only need to do that 80lbs more…
