I had a head of cabbage from our CSA box that I needed to use up, and I wasn’t really sure what to do with it. I also had a package of Aidell’s Chicken Apple Sausage. Then I decided, a wedding between these two was begging to happen. And so it did. And it was one of the quickest, simplest marriages ever. I think they’ll have a long and happy relationship.
Recipe: The Wedding of Sausage & Cabbage
1 medium head cabbage
1 package (4 links) Aidell’s Chicken Apple Sausage (or any of your favorite sausage), cut into bite-size pieces.
2 cloves garlic, minced
3-4 TBSP avocado or coconut oil
salt and pepper to taste
Heat the oil in a large, deep skillet over medium heat. Meanwhile, slice or shred the cabbage into thin strips. Add to skillet and sprinkle with salt, pepper and garlic powder. Stir and cover. Let cook for 3-4 minutes, stir again, and re-cover, cooking for another 4-5 minutes, until beginning to tender. Add in sausage and garlic, salt & pepper, and stir and cover again. Let cook until cabbage is beginning to brown and sausage is warmed through. Enjoy! This is delicious the next day, too!

Thanks for posting this recipe. I have a question for you. Where I live I can’t find nitrite, gluten , soy FREE sausages, so I am looking online for a place to buy. I checked the site of Aidell’s sausage and found that each package of 4 sausage costs $8.00. How do you feed your family of 7 with a medium size cabbage and 4 links of sausage?? Is that all you serve for dinner? You get left overs?? If I could feed my family of 6 for about $10.00 a meal I think I could afford the nitrite FREE, grass fed meat. I desperately need to know how to do it. Right now I use oats, rice, beans to stretch our budget. Really want to do away with the grains and legumes. But how to add meat to all meals without breaking the bank?? thanks for any suggestions. 🙂

Wow, $8 for 4 sausages is very expensive. I got a pack of 12 at Costco for about $11. I served other things with that meal–a salad, garden veggies, some broccoli and some fruit. That was just the main dish. I also use some rice and oats to stretch things further. I try to do lots of lots of veggies as they are cheaper and help at bulk to the meal. Do you have a Costco near you?

You can make your own Italian sausage from ground beef. Organic, grass-fed beef is easier to find than a wholesome sausage. Just google for a recipe.

Hi, Amanda! I haven’t tried it, but I would think it may be ok…but the cabbage may get soggy? Not really sure. If you try it, let me know how it goes!
