Oh, man. I stumbled upon something amazing with these. I stared in my pantry and saw some dates and some coconut oil, and voila! These babies were born. And boy, oh boy, these are no joke. My son yelled, “They taste like candy!” And that coming out of the mouth of a boy who had a bowl full of Halloween candy just a few days ago, is saying a lot!
Recipe Caramelized Coconut Dates (makes, well…20 dates)
20 pitted dates (Medjool are the best, but you can use another variety)
1/8 cup coconut oil, melted
salt to sprinkle (preferably sea salt)
unsweetened coconut flakes to sprinkle
Slice dates lengthwise down the middle and lay flat on a foil-lined baking sheet. Baste with coconut oil, sprinkle with coconut flakes and put a teensy bit of salt on each date. Broil a few inches from heat for 3-4 minutes, until starting to caramelize. Note: these will burn quickly, so keep an eye on them! Remove from oven and let cool for a few minutes before eating.
