I love a good onion ring! Unfortunately, I really haven’t had them since going Paleo a few years ago. These fried onions were awesome, and would be delicious on burgers, salads, almost anything! The best part–there’s no long process. It’s only 2 ingredients, and then sprinkle with salt!
Recipe: Healthy Fried Onions for the Clean Eater
1 large yellow onion
2 cups coconut oil
salt/pepper to taste
Put coconut oil into a saucepan and heat over medium-high heat. Meanwhile, cut ends off onion and then slice thin, in rounds. To test heat of oil, drop a small piece of onion in and if it immediately bubbles and comes to the top, it’s ready. If it sinks, wait a few more minutes. Add in onions and cook for about 10-11 minutes, stirring occasionally, until golden brown and crispy. Remove and drain on paper towel, sprinkle with salt, then munch away or use as a topping on something else! I chose to smother my steak in them. =)

Not sure where you stand on garbanzo bean flour, but we LOVE using it for the occasional fried chick-fil-a style chicken and onion rings. I want to try chicken fried steak also. I also use it for my gumbo roux…can you tell I live in the south;)

Made these today and they were delish! I also had a few sweet peppers that I needed to use before they went bad, so I used the same recipe for them as well. YUMMM!!!
