As I’d hoped, I officially have zucchini coming out my ears around here. Thank goodness, since my tomatoes still aren’t producing! Here’s a way to use some of that stuff up.
Recipe: Marinated Garlic Zucchini
About 8 zucchini
1/2 cup olive oil
2 TBSP lemon juice
2-3 cloves garlic, minced
1 TBSP Herbes de Provence
salt and pepper to taste
Combine the olive oil, lemon juice, garlic, herbs and salt and pepper in a small bowl. Cut ends off zucchini and slice in half lengthwise, then slice in half across. Lay into a 9×13 pan and baste with the olive oil mixture. Layer another row of zucchini and baste again. Pour any remaining marinade over the zucchini and place in refrigerator for at least an hour. Cook on grill for 6-8 minutes, until browned and tender.

Sounds great! I did mine on the grill the other night (we got a flexible basket for like $12 @ HomeGoods & love it!) with lemon grapeseed oil and fresh basil from our garden. And my tomatoes are going nuts, not quite ripe yet but tons of little balls and flowers. =)
