I’m not a big egg person. I love deviled eggs, but other than that, if I can’t fill scrambled eggs with a bunch of cheese, I just really don’t care for them. I don’t like ’em fried, either. So I pretty much eat dinner {or lunch} for breakfast. And this is what I had today!
Recipe: Turkey Avocado Wrap
2 butter lettuce leaves
2 slices turkey breast (I used THIS brand–only turkey, water and salt!)
mustard of choice (I used Annie’s organic dijon)
1/2 an avocado, sliced thin
Layer goods on lettuce leaves and enjoy!

thank you! I’m not an egg eater. In fact can’t stand the smell sometimes and I have stuggled with breakfast options since starting Paleo. I work 12 hour days with a 2 hour commute 3 days in a row (most of the time)and its hard to come up with something that I can grab and eat on the road. I do my prep work on Sunday for lunch and dinner, but I find myself making coconut flour muffins for my work days, but I’m trying to lose weight too. Any help would be greatly appreciated.

Wow, Cori, that’s tough. Do you eat sweet potatoes? Those are a good “on the go” snack that you can cook ahead of time and just reheat quickly before you go. Cashews, macadamia nuts, almonds, etc., almond butter with celery or apples, any leftovers from the night before. Muffins are great a few times a week, but I agree–they can make weight loss difficult, and they can get old! I have to say, the broccoli frittata recipe on my blog is excellent! I ate it every morning for a week! I hope that helps a little!

What are your thoughts on eating raw eggs during pregnancy? I love the thought of the garlic mayo, but raw eggs makes me a little nervous

I personally don’t have a problem with it, especially since I typically use local eggs, but you can ask your doc about it to make sure!
