Two amazing recipes using cashew milk!
I absolutely love Indian food. I’ve talked before here on my blog about how my dad was from India, and he was the cook in our house growing up. He never followed recipes, it was always a dash of this, a sprinkle of that, and it always ended up tasting amazing.
We eat mostly dairy-free, and I try to avoid added sugars whenever we can. I love using cashew milk because it’s unique and creamy and tastes so yummy! I’m going to share a few recipes today using unsweetened cashew milk, an excellent alternative to regular dairy that has zero sugar added.
Up first is my Creamy Curry Chicken recipe. This is a huge favorite in our house, and all my kids (and Superman!) wanted seconds. It’s a quick dish to throw together on a weeknight, makes your house smell amazing, and will make everyone happy!
Dairy Free Creamy Curry Chicken
Dairy Free Creamy Curry Chicken
What you need:
3 lbs boneless, skinless chicken breasts, cut into chunks
3 TBSP avocado oil (I get mine at Costco)
3-4 cloves minced garlic
1 onion, minced
2 cups cashew milk
1 (6 oz) can tomato paste
2 tsp garam masala powder or make your own
1 heaping tsp curry powder
1 tsp paprika
1 TBSP tapioca flour
1 tsp salt
pepper to taste
What to do:
Heat the oil in a skillet over medium heat and cook onions and garlic until fragrant.
Stir in garam masala, curry powder and paprika and cook for a minute or two.
Whisk in cashew milk and tomato paste, then reduce heat and whisk in tapioca flour until combined.
Add in chicken, cover and cook over low-medium heat for 15-20 minutes, until chicken is no longer pink.
Enjoy!

What you need:
1 cup cashew milk
1 ripe banana
10 ice cubes
1/2 tsp cardamom
1 TBSP almond butter
What to do:
Combine all ingredients in blender and blend until smooth.
Enjoy promptly.

Yum! I totally want to try that smoothie recipe. Does the cardamom stand out a lot? I don’t know if I’ve ever tried it before?

Hi, Amber! There’s a hint of cardamom flavor, but it’s not overpowering. However, I would say that if you haven’t had it before, it’s a “different” flavor. I love it, though! I would just proceed with an open mind! =)
