I’m not a huge fan of tuna salad, so this is a nice change. It’s a quick, simple lunch that’s packed full of protein and Omega 3’s!
Recipe: Salmon Salad
2 cans salmon, drained
2 boiled eggs
1/4 cup chopped onion
4-5 TBSP homemade garlic mayo
1/4 cup chopped celery
1/4 cup chopped bell pepper
splash of lemon juice
pinch cayenne
salt and pepper to taste
This is the salmon I found at Costco, and its only ingredients are Wild Alaskan Salmon and salt:
Combine all ingredients in a bowl and mash together with a fork. Eat alone or over a bed of greens. That’s it!

Do you know how many ounces of salmon were in those cans? I’m getting my shopping list ready to make this, and I already have some salmon in pouches. I’m just not sure if I need to buy more. Thanks!

Thanks! I just made it and it’s great! This was also my first attempt at making my own mayo. Feeling pretty impressed with myself right about now. 🙂 Now I need to think of how I’ll use the leftover mayo. Your original idea of deviled eggs sounds good. Thanks for a perfect summertime recipe!
