I was at Costco a few weeks ago and came across this:
I was so excited! Raw, unfiltered honey?! I snatched it up right away, and shared the pic on Instagram. Soon after, Nature Nate’s contacted me and asked if I’d like to try some more of their products (woo hoo!) and share a recipe on my site. They sent me another bottle of honey, and this incredible Strawberry Honey Syrup:
What a unique idea! I loved the flavor of the honey syrup, and can’t wait to try it on some of my “buttermilk” pancakes! But you know what I loved the most about their products? Seeing this on their bottles: Psalm 119: 103 “Thy word is sweeter than honey.” Love this!

Nature Nate’s came up with this recipe all on their own, and it. is. amazing! If you avoid dairy, you can leave the Bleu cheese off of this, and it’s still mouth-watering!

- 2 large sweet potatoes or 4 small
- 2 TBSP oil melted
- 1 Pinch sea salt
- ½ cup Nature Nate’s honey (it may also be available at your local Costco like it was mine!)
- ½ cup bleu cheese optional
- 1/3 cup dried cranberries
- ¼ cup chopped walnuts
- ½ TBSP fresh sage chopped
Ingredients

- Preheat oven to 400 degrees.
- Pierce sweet potatoes with a fork and microwave for 5-6 minutes, just until slightly tender.
- Cool, then remove sweet potato skins with a vegetable peeler, and slice to ¼” thick.
- Place slices on a parchment-lined baking sheet, trying not to overlap the slices as much as possible. Drizzle with coconut oil, sprinkle lightly with sea salt.
- Bake sweet potato slices in preheated oven for 10-15 minutes, just until the bottom edges begin to brown nicely. Flip each slice over and cook an additional 10-12 minutes. Remove and cool slightly.
- Using a metal spatula, gently transfer the warm sweet potato slices to a serving platter. Drizzle with Nature Nate’s honey. Top with bleu cheese, cranberries, and walnuts. Garnish with fresh-chopped sage, if desired. Serve immediately with forks & napkins to keep sticky fingers at bay!
