When I took these out of the oven, they reminded me of silver dollars that you might find on the beach. But they were chocolate. So they became Silver Dollar Chocolate Cookies. =)
Recipe: Silver Dollar Chocolate Cookies (makes 3-4 dozen cookies)
Note: This recipe contains butter, but you can easily substitute coconut oil or palm shortening in its place. The coconut oil, however, may make for a more oily cookie. I suggest storing these in the refrigerator as almond flour contains moisture and can get a “damp” feeling to them after sitting for a little while.
1 cup butter, softened (or coconut oil or organic palm shortening)
3/4 cup pure maple syrup
2 eggs
2 tsp vanilla
2/3 cup unsweetened cocoa powder
2.5 cups almond flour
1/2 tsp salt
1 tsp baking soda
Preheat oven to 350 degrees. In a medium bowl, beat butter, syrup, eggs and vanilla until well combined. Add remaining ingredients and beat until incorporated. Scoop out large tablespoon-sized scoops of dough and place onto a parchment paper-lined baking sheet. Bake for 9-10 minutes, and remove to wire rack to cool.

I made this recipe once before and they were a hit so I had to make them again recently. Due to unplanned situations I accidentally created the best brownies ever!!! I use coconut oil instead of butter (and I did last time as well) but this time I melted the oil without thinking. I didnt have enough maple syrup so half the en called for amount was honey . By the time I finished I had cake batter instead of cookie dough . I poured it in a 13×9 pan, covered it liberally with Enjoy Life chocolate chips and baked at 350 for approx 20 min or when your fork comes out clean. These brownies are a major hit and aremore moist and chocolatey then the regular kind! The best mistake I ever made!!!!!!
