I wanted to experiment, but had no idea where to start. I stood in the kitchen and saw a banana sitting on the counter. I could work with that. Looked in the cupboard. Almond butter. Hmmm…almond butter and banana? A classic. What if I mixed ’em up, rolled ’em up, and froze ’em up? Sounded intriguing. And what if I rolled ’em in coconut flakes? Even better! These little angels were so yummy, they’re gonna be regulars around these parts!
Recipe: Nutty Banana Coconut Bites (makes enough for 4-6 people)
2 ripe bananas
2 TBSP unsweetened almond butter (I buy it at Costco)
1/2 cup unsweetened coconut flakes (Note: I bet these would be even more delicious dipped in chocolate, too, but since I didn’t have any on-hand and I’m doing the Whole30, I didn’t try it. Come back and let me know if you do!)
In a bowl, mash the bananas and mix in almond butter until a gooey, semi-smooth consistency forms:
Using a spoon or a cookie scoop (I used a cookie scoop):
Spoon onto a parchment paper-covered plate or dish. Put in the freezer for 30-40 minutes, until the mixture is hard enough to mould with hands. Remove and quickly form into balls. Roll each ball in coconut flakes and put back on plate. Freeze for another 20-30 minutes, and then run to the freezer and enjoy!

Hi, Colleen! I have settled on enjoying my “cleaner” version of sweets. I seem to do fine with them, and baking and creating sweet treats are truly a joy for me. When I start to feel like I’m replacing good foods with sweets again, I just do a quick “Whole7” and re-set things, and balance myself back out. It seems to be working for me. I find too much joy and pleasure in homemade goods to eliminate them, and I just don’t think it’s realistic for me. So, I try to avoid processed, refined sugars or eating store-bought goodies, and leave my treats to homemade. Does that make sense?

YES!! me too, I need to just find my balance so I don’t gain back the weight I just lost. That’s been the hard part for me. So what are your main sweeteners? I hear so much on honey, aguave, coconut sugar, stevia, etc. do you have a clear article on which are the best in moderation?

Last question, so how many times a day do you eat your “cleaner” treats? I would like them after every meal 🙂 Is that wrong, well only if I gain weight… right?

Hmmm…that depends. If I have the treats on hand, I’ll usually eat some in the afternoon and some in the evening. I may graze throughout the day, too. lol Bad me. =)
