This is a simple recipe, and these crackers go great with a main dish, or just as a snack. One thing, though–you need to be careful, as these overcook quick. (As you can see from my high-quality photo.) Try to look past the burnt parts and see the gem of cracker that’s underneath! My kids all still loved them.
Recipe: Almond Flour Italian Crackers
2 cups almond flour
1 tsp salt
1 tsp Italian seasoning
1 tsp baking soda
1/4 cup olive oil
1 egg
Preheat oven to 340 degrees. Mix all ingredients in a small bowl, and then roll into a ball. Lay a sheet of parchment paper the width of a baking sheet on the counter and place the ball of dough on top. Flatten a bit, put another piece of parchment paper on top, and roll out with a rolling pin until about a 1/4″ thick. You can alter that thickness if you want, but if you want crunch, thinner is better. Take the top piece of parchment paper off, and transfer the other parchment paper with the dough on it onto a baking sheet. Bake for 10-15 minutes, depending on your oven. Keep a close eye on it so it doesn’t brown too much! Live and learn, live and learn…
