Cooking a good steak is all about giving it a little love. If it thinks you’re rushing it, pushing it, or you don’t appreciate it, you won’t see its full potential. Here are 3 steps to ensure your steak is perfect in every way.
1. Let it get warmed up
Taking a steak out of the fridge and putting it right into the oven is like jumping into a hot tub when it’s 20 degrees outside. It’ll hurt! Take your meat out about 30 minutes before you are going to cook it. Let it rest, warming up to room temperature to help it cook evenly. Doing this will help you avoid those brown edges and red insides, and help ensure a nice, even color all the way through! Here I have my steaks seasoned with some garlic salt and pepper just sitting out, waiting to be popped into the heat:
2. Don’t poke it around
Leave your meat alone while it’s cooking. I know it’s tempting to poke it with a fork, but don’t do it! Puncturing the flesh will make all the yummy juices seep out and toughen up your meat. Let it just do it’s thing, sizzling away. When the meat is ready to flip (this widely varies, depending on the thickness of your steak), gently grab it with tongs and flip it over. If you really have to poke it, use your finger to see if it seems like it’s ready. You can read more about that HERE. Let it sizzle away for a few more minutes, and remove it with your tongs. If you’re broiling it in the oven, take the whole broiler pan out and let it sit on the counter:
3. Let it rest
I know it’s tempting to just take that steak out and eat it right away. But resist, I say, resist! Let that meat sit and rest. If you cut it right away, all those delicious juices will come pouring out, and you’ll be left with a dehydrated steak. You don’t want that, do you? No, of course not. Let your little friend sit out for a solid 7-10 minutes. You can lay a piece of foil over it if that makes you feel better, but don’t seal it over the meat. Just let it breathe and believe me, you’ll be glad you did. After it’s rested for a bit, go ahead and slice away. You’ll be left with amazing, perfectly cooked steak:
