I am all about simplicity. As a mom of five kids, it seems that if I’m not careful to plan meals in advance, 3:00 rolls around and I stare doe-eyed into my fridge wondering what the heck I’m going to pull together for dinner. And then I get all stressed out, feel rushed, and usually everyone leaves the table still hungry because I didn’t have time to cook up anything other than the main dish.
I’ve become a huge fan of freezer meals over the past few months. Once a month, I get together with a friend and we prep 5-10 Paleo meals together to put into our freezers. Sometimes we use them for ourselves, sometimes we use them to share with a sick friend, or someone in need. I gotta say, it’s a huge load off my shoulders when I know I’ve got a meal ready to go in the freezer that I can just grab, throw in the crockpot and come home to that night!

Today I’m going to share with you one of our favorite recipes from the ebook, Slow Cooker Stuffed Peppers. Believe me, you won’t be disappointed in this one!

- 1 TBSP olive oil
- 2 lb ground beef cooked
- 1 onion peeled and diced
- 1 garlic clove minced
- 2 tsp chili powder
- 6 bell peppers tops cut off and cleaned
- 24 oz jar of your favorite pasta sauce
Ingredients

- Mix the olive oil, ground beef, onion, garlic and chili powder in a large bowl.
- Stuff each pepper.
- Place into Ziploc bag(s) and remove as much air as possible, seal and lay flat in your freezer.
- When ready to cook, thaw, place peppers in slow cooker, pour the remaining contents of freezer bag on top, pour pasta sauce over the peppers and cook on low for 6–8 hours.
