My kids aren’t huge fans of fried eggs, but they love them scrambled. And if I tell them it’s a “burrito,” they like them even more!
These Paleo Breakfast Burritos are quick to throw together, high in protein, and a great way to start your day!

- 1 dozen eggs
- 1 tsp salt
- 1/2 tsp garlic powder
- raw cheese (optional)
- 2 tsp avocado or coconut oil
- 1-2 lbs quality lunch meat of your choice I used pastrami here
Ingredients

- Heat a few tsps of oil in TWO medium skillets: one over low-medium heat, the other over medium-high heat.
- Scramble together eggs, salt, garlic powder, cheese (if desired) and any other ingredients you'd like to add into your burrito.
- Add the eggs to one of the skillets and cook until done.
- Once they are done, scoop some into a piece of lunch meat and roll up.
- Gently place into the other skillet with oil and fry for a minute or two on each side, and serve promptly.

Lunchmeat is about the least healthy thing to eat… try wrapping an egg and cheese mix in collard greens or a lettuce leaf instead.

I usually get Applegate or True Story, and they are a great source for lunch meat!
