Today is Superman’s birthday, and I thought he deserved something special for breakfast. These were a huge success with the kids, too–I only wish I had doubled the recipe so I would have had some leftover for tomorrow!
Recipe: Grain-Free Waffles (makes 6 or 7 belgian-style waffles)
4 eggs
1/2 cup honey
3 TBSP vanilla
3/4 cup water
1/4 cup unsweetened coconut milk
4 cups almond flour
1 tsp salt
1.5 tsp baking soda
3 TBSP arrowroot or tapioca flour
1 TBSP gluten-free baking powder
Plug in waffle maker and whisk together the eggs, honey, vanilla, water and coconut milk. Add in dry ingredients and stir to combine. Add a little more water if needed to make the batter “waffle consistency.” Cook as directed, and serve immediately.

Made these this morning with a couple modifications:
Used 1 cup vanilla whey protein powder, decreased almond floor to 3 cups
Used a little less honey
Substituted ground flax seed for the arrowroot
2% milk in place of coconut milk
