This recipe is so simple, but tastes amazing. Great for a busy weeknight or any other night!
Recipe: Garlic Basil Shrimp
2-3 lbs large shrimp, uncooked
4 TBSP olive oil
1/4 cup butter or coconut oil, melted
1/4 cup lemon juice
2 TBSP dijon mustard
1/2 cup minced fresh basil
1 TBSP garlic powder
salt/pepper to taste
Combine all ingredients in a large Ziploc bag and let marinate for at least an hour (this is great to do in the morning before the craziness begins so it’s ready later. If you’re pressed for time, just put it all in the bag and let it sit for a 1/2 hour). Place shrimp on skewers (again, if pressed for time, just lay them in a single layer on a foil-lined baking sheet). Place oven rack in highest position, a few inches from heat. Preheat broiler. Place shrimp in oven and cook for 3-4 minutes, until turned opaque in color. Eat!
