Bacon Beef Broccoli Fusion–Sous Vide Style!
Well, my recipe for the Sous Vide Paleo Recipe Showdown is finalized! I’ve officially sent it in to be judged. The TX Bar Organics meat was amazing! Have no clue what I’m talking about? Check out my previous post to see what’s up! So, wanna see what I came up with? Here it is!
Recipe: Bacon Beef Broccoli Fusion–Sous Vide Style!
2 lbs beef stew meat
4 cloves garlic, minced
2 tsp Herbes de Provence
2 tsp salt
1 tsp Chipotle powder
½ lb bacon, chopped
4 cups chopped broccoli
2 TBSP coconut oil
In a bowl, stir together the meat, garlic, Herbes de Provence, salt and Chipotle powder. Add to vacuum seal bag and seal. Heat water in Sous Vide to 135 degrees. Add sealed bag to water and cook for at least 6 hours. Remove from water and set aside. Heat coconut oil in a large skillet or wok over medium-high heat. Add bacon and cook for about 5 minutes. Add broccoli and cook another 5-6 minutes, until bacon is crispy and broccoli is beginning to be tender. Remove broccoli and bacon from skillet. Add meat to skillet (leaving out the juices) and sear quickly (1-2 minutes). Add broccoli and bacon and stir quickly to combine. Remove to serving platter and enjoy! This tastes great over cauliflower rice.
PS–If you don’t have a Sous Vide, check out Nom Nom Paleo’s idea for making your own! If you don’t want to do that, you can just cook the beef in water on some low/medium heat until cooked through.
Disclaimer: TX Bar Organics provided me with some cuts of meat to use for this contest, and Sous Vide Supreme provided me with a loaner Sous Vide Supreme (unless I win, then I get to keep it!) and vacuum sealer.

This is on the menu for next week. My husband wasn’t too thrilled about our new Paleo lifestyle, but who can complain with recipes like this?

Could the meat be prepared in a crockpot? I have no clue what a Sous Vide is.
Thanks!

Hi, Maxine! Do you have a vacuum sealer? If you do, you could put water in your crockpot and seal up the meat with a vacuum sealer and then put it in the crock pot on low. If you don’t, then you can just try it in the crock pot, the meat just may not be as moist. Hope that helps!

I love sous vide cooking! I have a question about this recipe though…I thought strong seasonings were supposed to be added AFTER it has cooked. Does adding the chipotle powder in the bag give it too much of that flavor?

Hi, Fay! I have not heard about the seasonings being added after? I did not have a problem with it being too strong, but if you are concerned, you could definitely add them after if desired! Hope that helps!

Made this tonight as the recipe called for, and it was perfect! Thanks for a great recipe!
