This recipe is technically Whole30 compliant without the vanilla, just make sure you’re not using it to satisfy a late-night (or any other!) sweet craving! Mine was pretty tart, but I would imagine if you have some sweet peaches, this would be really sweet!
Recipe: Caramelized Peaches & Cream
2 TBSP coconut oil
2 cups frozen peaches
1 tsp ground cinnamon
splash vanilla (eliminate if doing Whole30)
couple TBSP refrigerated unsweetened coconut milk, shaken
1 TBSP or so of chopped walnuts (if desired)
Heat oil in a skillet over medium-high heat. Add peaches and cook for about 5 minutes, until beginning to thaw. Add cinnamon and vanilla and stir. Cook for another 3-5 minutes, or until desired doneness. The longer you cook, the less liquid there will be. Serve with a dollop of cold coconut milk (mine was the consistency of a thin pudding), and enjoy!

Can i use canned peaches for this? I get a TON from WIC and im always looking for new ways to make them. (while still keeping it healthy)

Just made this with fresh peaches and plums, and it turned out great!
Also, I made a crumble using ground pecans and almonds, which I sprinkled on top. On nom nom!

because vanilla is not on whole 30, you should replace that with scraping a vanilla bean or using vanilla bean powder
