Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Beat together the peanut butter, shortening, brown sugar, almond milk and vanilla, then beat in the egg.
  3. Add in remaining ingredients and stir just until combined.
  4. Roll into about 1″ balls, flatten slightly with fork and make a criss-cross pattern, if desired.
  5. Bake for about 8 minutes, then let cool on baking sheet for 2 minutes before removing to wire rack. (Don’t over bake!)
