Instructions
  1. Preheat oven to 325 degrees and line a cookie sheet with parchment paper.
  2. Cream together the butter or coconut oil and shortening.
  3. Add in sugars and eggs and beat until combined, then stir in peppermint extract..
  4. Add in remaining ingredients and stir until well combined.
  5. Stir in chocolate chips, then drop by rounded tablespoons onto baking sheet, and flatten slightly..
  6. Bake for 8-10 minutes, until lightly golden, then cool on baking sheet for 2 minutes before removing to wire rack to cool completely.
